Lubya
Beef and Green Bean Stew.
Lubya means green beans, and this recipe is for a beef and green bean stew. A version with lamb is called Lubya Khadra. A Persian version of this is often written Lubia Polo.
2 lb green beans, trimmed and cut in half
1 lb beef, diced
1 large onion
4 cloves garlic
1 tin plum tomatoes (chopped)
2 tbsp tomato puree
salt, black pepper to season
olive oil
1 cup water (for stew)
1 cup rice (basmati)
1 1/2 cups water (for rice)
cucumber for garnish.
Peel and chop the onion, peel and mince the garlic. Fry onion in olive oil until transparent then add the garlic and a pinch of black pepper. Add the beef and continue to fry until well browned. Add the water, bring to boil, cover and simmer for 1 hour.
Add the green beans, the tomatoes, tomato puree and a good pinch of salt. Bring back to boil and simmer for another 20 minutes. During this time, make the rice.
Bring the 1 1/2 cups water to boil in a pan, add the rice, cover and simmer gently for 10 minutes. Switch off heat and leave in place for 10 minutes.
Serve the stew with the rice, and garnish with cucumber. I often eat the stew and rice with a lebanese cucumber.
