Foul Medames
Foul Medames (or ful medames, foul mudammas) is originally an Egyptian dish. Such is its popularity, variations of the recipe now exist around all countries in the Middle East. This is my own recipe which includes chickpeas and makes for even more flavour.
1 can fava beans
1 can chick peas
3 cloves garlic
1 hot green chilli
1 lemon
2 tbsp tahini
olive oil
1/2 cup boliing water
handful flat leaf parsley
salt, pepper to season
4 pitta bread
Open the cans, rinse contents thoroughly, place beans and chickpeas in a small saucepan with water. Bring to boil and simmer gently for 10 minutes. Then drain well. Keep aside 1/2 cup of the beans and chickpeas.
Put tahini in a bowl, add peeled and minced garlic. Finely chop the green chilli and add to bowl. Add juice of 1 lemon, 2 tbsp olive oil, pinch salt and pepper to season. Add the water and mix well.
Mash the remaining beans and chickpeas to a rough pulp, add to the tahini mixture and combine well. Place on a large serving bowl and decorate on top with the 1/2 cup beans saved earlier.
Chop the parsley and sprinkle on top. Drizzle with a little olive oil. Serve with pitta bread.
