Jibneh
Fried Halloumi Cheese (jibneh makli).
Jibneh (or halloumi) is a cheese used all over the Middle East. Traditionally made from goat or sheep milk it is nowadays more commonly produced from cow's milk instead.
This recipe is especially quick, tasty and nutricious.
1 block halloumi (around 250gm)
olive oil
2 medium ripe tomatoes
baby salad leaves
black pepper to season
4 pitta bread (optional)
Slice the halloumi into thick slices. Gently saute in olive oil until it is lightly browned on both sides. Serve by putting a handful of the salad leaves on each plate, and top with one or more slices of the halloumi. Garnish with sliced tomatoes. Season with black pepper to taste and eat with pitta bread.
