Lentil Soup


This is a very popular dish in Palestine, Lebanon and throughout the Middle East. In addition to being extremely tasty this is a very healthy dish.

It is variously known as shurba al adas, shurba adas, shawrbat adas and shorbat adas.

1 cup dried red lentils
1 onion, chopped
4 cups chicken stock
1/2 teaspoon ground cumin
1/2 teaspoon ground black pepper
1/2 teaspoon salt
1/2 lemon
chopped fresh parsley
olive oil
pitta bread

Wash and drain the lentils. Heat olive oil in a saucepan and gently fry the onion until transparent. Add the lentils, pepper and cumin, and fry for a further two minutes. Add the chicken stock and salt, bring to the boil, cover and simmer for 30-40 minutes.

Taste and add more salt as required. Squeeze juice of half lemon into soup. Garnish with the chopped parsely and serve with toasted pitta bread.
