Mujadara


Mujadara is a popular rice and lentil dish from the middle east, flavoured with onions. It is fairly simple to cook and due to its popularity is available ready-made in many delis.

There are a variety of alternative English spellings used for mujadara, which include mujadarrah, mujadarra, mujaddara and mjudra.

4 medium to large onions
1 cup rice
1 cup brown or green lentils
2 cups water
olive oil
salt, pepper
1 teaspoon ground cumin
1 lebanese cucumber (or 1/2 cucumber)
6 medium tomatoes

Chop two of the onions and saute in olive oil until transparent. Add the cumin and lentils and saute gently for a few minutes. Add one cup of water, bring to boil, cover and simmer for 10 minutes. Then add the rice, pinch of salt and pepper to season and the remaining cup of water, bring to boil, cover and simmer for 10 minutes.
After this switch off heat and leave.

Finely chop the remaining two onions and saute in a separate pan until they are dark golden brown. Serve the mujadara topped with the sauted onions.

I prefer to serve a small salad either on the side, or on top of the mujadara. To make this, chop the lebanese cucumber and tomatoes into small cubes, mix and serve.
