Omelette
Omelette with Parsley and Onion.
Omelette dishes are fairly universal and are just as popular in the Middle East as elsewhere. They are quick to prepare and very nutricious.
3 eggs
1 medium onion
handful flat leaf parsley
olive oil
salt, pepper to season
Chop parsely finely. Peel and slice the onion. Whisk eggs in a bowl.
Saute the onion in olive oil until translucent. Chop the parsely and stir in well. Add the eggs and mix well. Add salt and pepper to season.
Cook for 1 minute, turn and cook for 1 minute more.
Serve with fresh chopped tomatoes, green olives and pitta bread.
